In 1861, Mark's Great Grandfather opened up a butcher shop at the Waterloo Market. Being of German descent, his expertise in creating sausage soon attracted a loyal clientele. At this time, the business plan was to produce exceptional products made from simple recipes and the finest ingredients with no preservatives or fillers, while still staying small enough to maintain the close relationship with the customers who came to rely on his name for quality. Meticulous attention to the freshness and quality of ingredients were the key to success.

Today, nearly 150 years later, not much has changed as the business takes flight again. Mark carries on the tradition of producing fresh sausage while taking great pride in his work the same way his Great Grandfather did.

All of Mark's gourmet sausages are 100% natural - no fillers or preservatives. Lean cuts of the most flavourful federally inspected cuts of pork, water, and spice. That's it and that's all! Frozen and vacuum packed, you are assured of "just created" freshness whenever you fire up your barbeque! While fat content is required to provide flavour, excess fat is not tolerated.
