Mark's "Nearly" Famous Sausage

Spicey Paella

Makes 6 servings
Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients:


3 Mark's Nearly Famous Hot Italian Sausages (removed from casings)
2 tbsp Olive Oil
1 Onion (chopped)
2 Garlic Cloves (chopped)
1/4 tsp Hot red pepper flakes
1 1/2 cups Uncooked long grain rice
1 Diced sweet red pepper
1 Diced sweet yellow pepper
2 Diced plum tomatoes
1/4 tsp Powdered Saffron
1/2 tsp Dried Thyme
3 cups Chicken stock
1/2 tsp Salt
1 lb Shelled de-veined Shrimp
1 cup Frozen Peas (defrosted)

Directions:

  1. Heat a large skillet on medium-high heat. Add sausage meat and break up. Cook until browned - about 4 minutes. remove sausage meat and set aside
  2. Heat oil and add onion, garlic, and hot pepper flakes. Cook until softened - about 2 minutes. Add rice and cook for 3 minutes
  3. Stir in tomatoes, saffron, thyme, chicken stock, and salt. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes until liquid is almost absorbed.
  4. Add peppers, sausage, shrimp, and peas, cover and continue to cook until shrimp are pink and peas are heated through - about 5 minutes.
