Mark's "Nearly" Famous Sausage

Spicey Paella
Makes 6 servings

Cooking time: 30 minutes
Ingredients:
| 3 | Mark's Nearly Famous Hot Italian Sausages (removed from casings) |
| 2 tbsp | Olive Oil |
| 1 | Onion (chopped) |
| 2 | Garlic Cloves (chopped) |
| 1/4 tsp | Hot red pepper flakes |
| 1 1/2 cups | Uncooked long grain rice |
| 1 | Diced sweet red pepper |
| 1 | Diced sweet yellow pepper |
| 2 | Diced plum tomatoes |
| 1/4 tsp | Powdered Saffron |
| 1/2 tsp | Dried Thyme |
| 3 cups | Chicken stock |
| 1/2 tsp | Salt |
| 1 lb | Shelled de-veined Shrimp |
| 1 cup | Frozen Peas (defrosted) |
Directions:
- Heat a large skillet on medium-high heat. Add sausage meat and break up. Cook until browned - about 4 minutes. remove sausage meat and set aside
- Heat oil and add onion, garlic, and hot pepper flakes. Cook until softened - about 2 minutes. Add rice and cook for 3 minutes
- Stir in tomatoes, saffron, thyme, chicken stock, and salt. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes until liquid is almost absorbed.
- Add peppers, sausage, shrimp, and peas, cover and continue to cook until shrimp are pink and peas are heated through - about 5 minutes.
